Consumed since ancient times and also known as mountain thyme, zahter grows on rocky and steep slopes and can be collected in limited quantities between May and July. Zahter is gathered on the slopes of the Amanos Mountains by the local villagers with a delicate labor before the first dew of the morning falls. The zahter, which is expertly extracted, is washed and left to dry in the natural environment. Anadolu Lezzetleri Amanos Mountains Zahter Salad is then chopped and blended with rock salt, olive oil and Hatay pepper paste and filled into jars.
