HISTORY OF HONEY
The historical origin of the honey goes back to the history of humanity. Although it is unknown who made it but the fact is that bees have been existed and worked for more than 30 million years. Throughout history, honey was a nutritional source for humanity and considered very significant and sacred by all religions. The Turkish people knew bees in the wild environment and used the honey for nutrition besides it is confirmed in the written sources that when they settled in life they started to work in animal husbandry and apiculture. That was clear from the insects on flowers on the walls ornaments made in Çatalhöyük in 9.000-8.000 BC. The archives of the Ottoman palace in the 15th and 17th century confirmed that 14-65 tons of honey was consumed per year. And today honey is still one of the integral parts of our cuisine.
THE BIRTHPLACE OF NATURAL HONEY IN TURKEY
Turkey is the world’s second largest beekeeping country after China. It is also one of a few countries with varied honey plants and premium quality honey production. Our wonder of nature is obtained from Dikenli Village of Tunceli, which is located in Munzur Row Mountains at an altitude of 1532 meters. There are numerous plant species in the Munzur Mountains. 43 of these plants are endemic species that only grow in the region. This is one of the regions that have more endemic plants than many countries in Europe. Tunceli is the home of more than 1,500 plant varieties, including endemic plants. The fact that Tunceli is covered with mountains and deep valleys makes it like a castle for the continuation of natural life. Most of the plant species that bees make more use of, especially for honey production, are present in this region. Dikenli Village has not been inhabited since 2000 and it is 25 km away from the nearest settlement (According to research, it has been determined that a bee travels at a distance of 11.5 km) There is absolutely no environmental pollution, vehicle traffic, vehicle exhaust smoke or agricultural fields since there is no life around, bees have no chance of reaching any human-made artificial sugar. In this region bees produce organic honey in a completely natural environment.
FEATURES OF HONEY
The nutritional value of the honey we produce is as rich as possible and of superior quality. The values determined for real and organic honey are obtained from the laboratory tests
performed on our honey. The results show that the quality and naturalness of honey lies in the PROLINE value. Proline is the most important amino acid that shows the purity of honey among the amino acids that make up the protein. Proline value is determined as 792.6 mg in our honey. Besides, the artificial sugar ratio in our honey was determined as 0.0. Maltose and Sucrose have not been detected in any way. HMF rate, which is another indicator of quality and naturalness in honey, is 9.4. The fructose-glucose ratio, which is determined in the Turkish Food Codex to be at least 60%, is 77.4%. Diastases rate has been measured as 23.1 too.
