Place 0.5-1 kg of washed vegetables in a dry and clean jar. Boil 750 ml (3.5 cups) of water. Remove from the stove, cool for 5-10 minutes and pour into a glass container. When it cools down, add 300 ml (1.5 cups) of vinegar. Fill the jar with the vegetables with this brine mixture to the brim so that there is no air gap and close the lid tightly. You can discard the excess brine mixture. When it is kept at room temperature and in a dark environment, your pickle is ready for consumption within 10-20 days, depending on the seasonal temperature. After opening the lid, store the pickle in the refrigerator.
