Weights are placed on them so that they can drain their water thoroughly. It is kept in this way for a day. Pepper paste, garlic, walnut, olive oil prepared specially for the makdus is blended in a separate place. The eggplants, whose juices are well drained, are separated slightly, filled with the prepared material and placed in jars. Olive oil is filled to cover them. It may be left open for a few days. It may overflow. It is consumed as an appetizer. It has a delicious, sharp aroma. It is allergen due to the walnuts in it. Ingredients: Eggplant, pepper, garlic, walnut, olive oil, salt.
