Product Description
Yoghurt, dried mint, wheat flour, dried red pepper, green pepper, onion, if desired, are finely chopped and mixed. The mortar, which is rubbed into dough, is covered with a cloth in a bowl and left for at least one week to ferment and swell. The waiting time determines the type of tarhana. Raya Organic Baby Tarhana that is left to ferment for a relatively long time becomes sour tarhana, tarhana that is left to dry (processed) after a shorter period of time becomes sweet tarhana. The fermented mortar is laid out on a cloth in pieces and left to dry outside in a shaded place. When it dries, it is rubbed by hand and turned into powder, and in some regions it is dried into larger pieces or bagels and stored.
